Some readers may recognize the lyric found in my title for this entry from Jay-Z and Kanye West’s joint album Watch the Throne. In the song N***** in Paris, Jay-Z mentions rollies that don’t tick tock, which is a reference to the Rolex luxury watch. Well, I spent two weeks in Uganda with three friends from my undergrad college days. And, while we were there we had a local treat called Rolex–and I’m not talking about the watch.

What is a Ugandan Rolex? A brilliant snack invented by Ugandan university students, or so we were told. It consists of tomatoes and green pepper over a fried egg rolled in chapati (aka roti for fans of Indian cuisine). Honestly, along with the African tea, Rolex was the most frequent item I requested when dining. The name is the result of Rolled + Eggs = Rolex. Take a look at the pictures below.  

Step 1: Oil the cooking surface.

Step 2: Fry the eggs over the heated surface.

Step 3: Place the fired egg over one, or two, chapatis (and yes, roti and chapati are the same thing).

Step 4: Chop tomatoes and green bell peppers over the fried eggs.

Step 5: Take one side of the chapati/roti and start rolling.

Step 6: Finish rolling the chapati and start eating it!
